Cabernet Sauvignon:

Avoca has long been renowned for the quality of its Cabernet Sauvignon. This classic grape from the Bordeau region of France, produces rich wines of great character at the southern end of the Pyrenees. Cabernet vines grow small grapes with thick skins. Wine made from Cabernet Sauvignon in premium wine regions such as the Pyrenees usually has a firm structure, deep color and rich flavors. Eurabbie Cabernets spend a year in new or near-new French oak before being released.

Shiraz:

Although Shiraz grapes are much larger than Cabernet Sauvignon, they too make wines of generous color and flavour. Many of Australia’s finest wines made from Shiraz come from Victoria, specifically, from about Great Western, through the Pyrenees, and to about Heathcote. These wines are known for their excellent structure, full flavour and almost black color. Although Eurabbie’s ambition was to specialise in premium Cabernet Sauvignon, many believe its Shiraz to be the finer of the two.

Merlot:

A natural variant of Cabernet Sauvignon, Merlot was first identified in French vineyards more than two centuries ago. It has bigger berries with thinner skins, and thus tends to make a lighter, softer wine than Cabernet Sauvignon. Wines made from Merlot should be rich and mouth-filling, but also softer and less tannic than Cabernet. It makes a splendid blending partner to Cabernet. In 2004, Eurabbie Estate’s 2003 Merlot topped a class of 32 wines in the open cabernet varieties, any vintage, at the Victorian wines show at Ballarat, finishing ahead of such well known names as deBortoli, Seppelt’s and Best’s.
 

Chardonnay:

This ancient variety was brought back to France from the Mediterranean by early Crusaders and quickly found a home in Burgundy and Champagne. Its grapes make a wine which can be crafted into many different styles by skilled winemakers. It is without doubt the finest, most versatile white wine variety grown anywhere in the world. Anyone who tastes a poor chardonnay has tasted the work of poor winemaking. Eurabbie’s Chardonnay has a touch of sweetness for wider appeal.
